Guilt Free Cookies

What makes these cookies guilt free, they’re made without dairy, sugar or oil. These cookies are rich and full of flavor and made with only 3 ingredients. Another reason to be in love with these vegan cookies, they’re super simple to make. They may not be your typical indulgent cookie, but they’re amazingly delicious and satisfying. The combination of chocolate, coconut and banana is perfection. They have a chewy texture and sweetness from the hint of banana which gives them an indulgent tropical feel.

2 ripe bananas mashed

1 1/2 cup unsweetened shredded coconut

1/4 cup dark chocolate melted

Preheat oven to 350 degrees

In a mixing bowl place the bananas and mash with a fork. The mixture should have a liquid but lumpy consistency. Add the shredded coconut, mix well. Use a spoon to remove about 2 tbsp of batter, roll into a ball and place on a non stick baking sheet. Use your pointer and index finger to press flat into a cookie shape. Continue with the rest of the batter. Place in the oven and bake for 20-25 minutes. Remove from oven, drizzle melted dark chocolate over top of cookies. Allow to cool.
