Roasted Brussel Sprouts

These brussel sprouts were my favorite go-to when I wanted my kids to eat their greens but hide the earthy taste of brussel sprouts. They are quick and easy and filled with flavor and go with any weeknight meal. The balsamic glaze gives these the perfect touch!

Ingredients:

2 lbs fresh brussel sprouts - halved

4 cloves of garlic - minced

2 tbsp balsamic vingar

1/3 C olive oil

1/2 tsp Himalayan salt

1/2 tsp black pepper

2 tbsp vegan butter - cubed

1 tbsp rice vinegar

balsamic glaze - optional

Instructions:

Trim and clean leaved from brussel sprouts and slice in half lengthwise.

In a bowl add garlic, balsamic vinegar, olive oil, salt, black pepper, and rice vinegar. Mix until combined then add brussel sprouts to bowl and coat all the sprouts with the mixture.

Once coated, place the brussel sprouts on a baking sheet lined with aluminum foil. Then add the cubed butter to the brussel sprouts on the pan.

Place in a 475 degree oven for 15-20 minutes being sure to flip the brussel sprouts half way through the cooking time.

When cooked, plate and drizzle with balsamic glaze.
