Chickpea Salad with Smokey Air Fried Chickpeas and Arugula Greens on Sourdough Bread

And yes another chickpea recipe. Because chickpeas are heavenly 🙌🏽

This chickpea salad sandwich recipe is a filling and a easy lunch idea that you can make in minutes. It’s bursting with flavor and satisfying textures. There’s levels to this. So lets take it to another level!!!

Similar to tuna salad or chicken salad, but made totally vegan with simple classic ingredients. I combined creamy chickpea salad and smokey crunchy air fried chickpeas then placed on toasted sourdough bread with fresh arugula micro greens.

This was heaven!!!

Chickpea salad recipe:
1/2 canned chickpeas
1 stalk celery diced
2 tbsp red onion diced
2 tbsp vegan mayonnaise
1tbsp dijon mustard
1 tbsp furikake Japanese seasoning
1/2 tsp black pepper
1 stalk green onion chopped

In a bowl add red onions celery and chickpeas. Use a potato masher to mash the chickpeas to a slightly smooth but still full of texture consistency. Add the rest of the ingredients and combine.

Air fried chickpeas recipe:
1/2 can chickpeas
1/2 tsp hickory smoked sea salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1/2 tbsp grape seed oil
1/2 tbsp nutritional yeast

Place all the ingredients in a bowl and combine. Once combined place seasoned chickpeas on air fryer liner. Air fry in the air fryer on 400 degrees for 5-7 minutes or until browned.

Once both chickpeas recipes are complete, place on toasted sourdough bread with arugula micro greens and enjoy 😉
