Seitan Beef Stew

This Seitan Beef Stew is all you need in your life. Its flavorful and loaded with tender seitan, potatoes, and carrots. Cooked in a rich and savory curry sauce, this stew recipe is comfort food at its best. This simple and healthy stew recipe is made all in one pot. I assure you that this will be the best vegan beef stew recipe you will ever have.

16 0z seitan (refer to my homemade seitan recipe)

2 tbsp curry powder

1/2 tsp ground cloves

1/2 tsp all spice

1/2 tsp black pepper

1 tbsp gravy master

1/2 tsp ground ginger

2 tbsp grape seed oil

2 tbsp catsup

1/2 onion chopped

2 stems green onions cut in half

3 sprigs fresh thyme

4 garlic cloves chopped

1 russet potato peeled and cut into cubes

1 carrot cut into cubes

8 whole cloves

1 scotch bonnet pepper (habanero pepper)

2 1/2 cup water

salt to taste

On medium heat in a dutch oven or large pot add the grapeseed oil. Add the seitan and allow to slightly brown about 2 minutes. Stir, then add the onions and garlic, allow to cook for about 2 minutes. Stir, then add the rest of the ingredients except for the potatoes and carrots. Stir cook for 1 minute. Add the water and potatoes and carrots. Stir well to incorporate all of the ingredients, taste and add salt as needed. Cover and cook for 30 minutes or until the potatoes are done. Check every 10 minutes or so, to make sure the ingredients are not sticking to the bottom of the pot. Once the potatoes are cooked your done.
